Abstract
Ragi (Eleusine coracana L. Gaertn) is an important millet extensively grown in various regions of India, particularly in Karnataka, Tamilnadu, Orissa, Maharashtra and Andhrapradesh. It has a protein content near about six to eight per cent, same as in the other important varieties of cereals, 55 to 65 per cent starch and low fat content about 2 to 2.5 per cent, which favours in the preparation of brewing.
